Soul Food traditionally belonged to African Americans of the Southern USA. Soul Food has a rich black history that begins in the slave days. African slaves were fed leftover foods and the undesirable meat cuts that their masters spared for them after they kept the meatiest cuts for themselves. The slaves, because they were of different origin, merged their different food cultures and influences. After slavery was abolished, there were laws that prevented the freed slaves from purchasing prime cuts even though most couldn’t afford them anyway. They made do with what they had and over time they came up with different delicious foods and flavors. This was the birth of Soul Food. Over the years it has evolved and incorporated other influences and spices and ingredients, giving us what we now love and appreciate as Soul Food.
In a large resealable plastic bag, combine flour and Soul Food Seasoning. In a shallow bowl, beat eggs and water add salt, Soul Food Seasoning and the remaining flour and pepper. Dip chicken in egg mixture, then place in the bag, a few pieces at a time. Seal bag and shake to coat.
In a deep-fat fryer, heat oil to 375°. Fry chicken for 5-6 minutes on each side until golden brown and juices run clear. Drain on paper towels.
