Traditionally, Hawaiians dug an underground oven called ‘imu’ to cook meat. The pit was lined with rocks and a fire lit to heat the rocks up. Food was then wrapped in leaves to give it flavor, and then placed in the pit to cook slowly. With the introduction of large scale farming, immigrant workers came to Hawaii from Puerto Rico, China, Portugal, Japan, Philippines and Korea. They introduced their food culture, blending it with that of the locals. From this fusion, the vibrant, spicy, rich Hawaiian cuisine was born. It is a brilliant sweet, sour, spicy, fiery and delicious!

1.Cover the chicken extravagantly with Hawaiian BBQ Spice Rub. Mix soy sauce and Hawaiian BBQ Spice Rub and dip to cover the chicken on both sides. Put in a ziplock bag and keep in the fridge for 6-10 hours.
