West Africa is one of the world’s most ethnically diverse areas. With a wide variety of people and cultures, different areas have their own regional favorite spices, which are largely influenced by religion, custom and tradition. Trade was the main force behind the change in West African cuisine. The Portuguese established a slave trade center in this region. Over several decades, the Dutch, British and other European traders competed to control this very lucrative trade route. This trade route facilitated the introduction of other foods and seasoning from Europe and Asia, largely influencing the West African way of cooking, culminating in the many different foods and spices famous in this region like the Tsire spice powder.
